The grapes are selected and harvested by hand from vineyards over 40 years old in 12-kilo boxes. The grapes are harvested by hand and collected in 12 kg crates and taken to the winery where the best grapes are then selected using a selection table. Fermentation takes place at a controlled temperature. The wine is oak aged for 22 months in French oak barrels.
